Peggy Adkins is glad to be ‘home'

Peggy Adkins was raised in Hamilton, Ill., and attended school in the Hamilton School District, grades K-12.

She is the daughter of Daniel and Beverly Boone of Hamilton. Her siblings are Tom Boone and Penny Rockhold.

She attended Southeastern Community College in Keokuk and Southeastern University in Lakeland, Fla.

Adkins returned to the Tri-State Area a few years ago after living in Florida. She teaches third grade at Wells-Carey Elementary School, Keokuk. She taught kindergarten and first grade in Florida for 10 years.

She is a National Board Certified Teacher; was Bartow Elementary Academy Teacher of the Year; and a finalist for Polk County (Fla.) Teacher of the Year.

Adkins is a youth sponsor at Faith Assembly of God Church in Hamilton.


“I love working with my sister Penny in youth group,” said Adkins. “Spending time with teens is very thrilling.”

In addition, Adkins is the Titan Poms dance coach. The Titans Poms have won an opportunity to perform at the Outback Bowl in Tampa, Fla.

“My team of girls are very hard working girls, committed to always doing their best,” she said.

The team is holding numerous fund-raisers to pay for travel to Florida.

What food are you most famous for? Horseshoes and spaghetti.

What kind of music do you enjoy? Christian rock and '80s music.

What are your hobbies? I enjoy traveling with my girls.

Do you have a favorite pet (present or past)? Our cat, Peaches.

Where would you go if you won a trip anywhere in the world and why? Australia, because it has so many unique places to visit and because it has “character.”

What has been life's most rewarding experience for you? Living a Christian life and having my two girls.

How many children, grandchildren, great-grandchildren do you have? I have two children. Genna, 16 years old and Paige, 10 years old.

What book are you currently reading? I only have time to read my Bible daily.

What is your least favorite food? Seafood.

What is your favorite food? Steak.

What makes a perfect summer day and how would you spend it if you could, anyway you wanted? Spending time with Genna and Paige white water rafting in the mountains.

Have a favorite sport to do or watch? I love to watch St. Louis baseball and Tampa Bay Buccaneer football. I love to play softball.

Favorite childhood, teen and adult book? Joel Osteen's book, “Your Best Life Now.”

Most memorable moment? Personal: The two days my children were born and a mission trip to Philippines.

Events: Attending the 100th celebration of the St. Louis Cardinals; going to watch Tampa Bay Lightning play in the Stanley Cup; and watching the space shuttle blast off at Kennedy Space Center.

Most famous person(s) you've met? President Bush, Bob Gibson, Ozzy Smith, Mark McGwire and Tony Dungy.

What do you do for fun? I enjoy spending time with my entire family. We like to get together in Hamilton as well as take vacations together.

What do you like most about yourself? I have a big heart for children and teenagers.

As a kid, what did you want to be when you grew up? Something in ministry.

What do you collect? St. Louis Cardinal and Tampa Bay Buccaneers memorabilia, Raggedy Ann and Andy and Disney things.

Where would you live if you had a choice? In Florida again... only if my family would join me. Even though I miss Florida ... I am proud to live back “home” in Hamilton.

What is your favorite TV show and actor/actress? “24.”

If you could have dinner with any three people (living or dead) who would they be? My Grandpa and Grandma Howe.

What was your favorite subject in school? Social studies and science.

What was your first job? Serving ice cream at Dairy Queen in Hamilton.

Best word(s) of advice you've received? “Keep your head up” and “Keep looking forward.”

Favorite movie of all time? “The Wizard of Oz.”

What is your favorite ethnic food? Chinese.

Person you admire most and why? My mom and dad because they are always available when I need them. My parents have such big hearts for everyone.

If you had a motto, what would it be? “As for me and my house, I will serve the Lord.”

What is your most memorable and/or embarrassing food experience? While living in Florida we would have several college students over and I would fix ‘A Feast” for all the World Series games, Final Four games, Super Bowl games, and Stanley Cup games.

What is your favorite recipe? “Horseshoes.”

Horseshoes

Ingredients:

Sirloin ground beef (or ground beef)

French fries

Spaghetti sauce

Mozzarella cheese

Directions:

Grill a “big hamburger” for each serving.

Fry a small bag of French fries.

Warm the spaghetti sauce on the stove top.

Make one serving at a time.

First layer: Place the grilled hamburger on a microwave-safe plate.

Second layer: Add the French fries on top of the hamburger, covering the entire plate.

Third layer: Pour enough spaghetti sauce over the fries.

Fourth layer: Spread Mozzarella cheese on top.

Microwave each serving covered for about a 90 seconds.
