Peggy Knudson is married to Pastor Monte Knudson and has six children; they have been foster parents for 20 years.
She lives in Mount Pleasant and is the director of Cradle of Hope Pregnancy Resource Center.

What is your most memorable and/or embarrassing food experience? Leaving “the bag” in the turkey on my first Thanksgiving.
What is your favorite recipe? Creamy chicken.

Creamy chicken
Ingredients:
2 cans Swanson chicken
or 3-4 cups of cut-up chicken
1 can of cream of chicken
1 can of cream of celery
1 stalk of celery, cut up
1/2 tsp. soy sauce
Directions:
Mix all ingredients together. Melt 1/2 stick butter in a 9 by 13 pan. Put mixture in pan and top with bread crumbs. Bake in a 350 degree oven for 30-40 minutes.
Great over mashed potatoes.
